Beef Ularthiyathu or roasted beef fry is a delicious mouth watering signature dish of the Christian community. Filled with nostalgic memories, this is a sure dish during festive occasions and gatherings. Each state in Kerala has its own variations in making the dish. Our grandparents used to slow cook beef via the traditional way in a clay pot over the old fashioned ‘Aduppu’ for over 2 hours. The clay pot, the smoke and the slow heat imparted, renders a unique taste and flavor to the dish. Beef Ularthiyathu with Porotta is a widely popular Thattukada dish in Kerala. We have included the spicy Beef dish for quick reference. Beef pieces are cooked in a fried spicy masala and later roasted with coconut pieces and curry leaves. Ingredients
- Beef(cut into small pieces) - 1 kg
- Onion(finely chopped) - 1 no
- garlic(chopped) - 4 cloves
- Ginger(chopped) - 2 tsp
- Green chillies(slit) - 4 nos
- Curry leaves(Few) -
- Coconut(finely chopped) - 1/2 cup
- Pepper powder - 1 tsp
For grinding:
- Onion(cubed) - 1 no
- Ginger(small size) - 1 no
- garlic(peeled) - 4 cloves
- Green chillies - 2 nos
- Coriander powder - 1 tbsp
- Chilly powder - 2 tsp
- Turmeric powder - 1 tsp
- Eastern meat masala powder - 2 tsp
- Garam masala powder - 1 tsp
- Cumin seeds(Jeerakam) - 1 tsp
- Curry leaves - 1 sprig
- Salt(As reqd) -
- Oil(As reqd) -

Instructions
- Heat 2 tsp oil in kadai, add cumin seeds, onion, green chillies, ginger, garlic and curry leaves.
- Saute till the onion becomes brown in color.
- Add chilly powder, turmeric powder, coriander powder, meat masala, garam masala and pinch of salt.
- Reduce the flame and fry the masala till it becomes dark brown in color and nice aroma comes.
- Remove from flame and allow it cool. than grind the mixture finely and keep this aside.
- Add little water and cook it in pressure cooker.(Make it semi thick masala)
- Heat oil in another pan, add ginger, garlic, green chillies and onion. Fry for 3 minutes.
- Add curry leaves, coconut pieces to it and make the masala dry. Now add little pepper and remove from flame.
- A very delicious beef ularthiyathu is ready. Serve hot with kerala rice.
