For preparing chicken schezuan, first mix together the following ingredients: 1/2 tbsp soya sauce, 1 tbsp cornflour, 1 tbsp maida, agino moto, 1/4 tsp pepper powder and required salt.
Mix the drained chicken pieces with the mixture and keep aside for 30 minutes.
Heat oil in a pan and fry the marinated chicken pieces to a golden brown color. Keep the fried chicken pieces aside.
Pour the remaining oil into another pan. Heat the oil and add sugar. Saute till sugar becomes light brown in color.
Add onion, garlic, ginger and fry till golden in color.
Stir in chilly sauce, remaining soya sauce and tomato sauce. Stir in low heat.
Add a pinch of agino moto, 1/4 tsp pepper powder and salt if needed.
