  • 3 cups Basmati rice soaked in water and drained
  • 1 1/2 nos Red onion cut very thin lengthwise, medium
  • 4 nos Plum tomato cut into very small cube pieces
  • 6 nos Green chillies
  • 1/2 bunch Coriander leaves finely chopped
  • 1/4 bunch Mint leaves finely chopped, Pudhina
  • Ginger garlic paste - 2 1/2 tbsp
  • 4 nos Cloves Grambu
  • 2" stick Cinnamon Karugapatta
  • 4 nos Cardamom Elakka
  • Bay leaves A few, Vazhana/Karuga ela
  • Oil As reqd
  • Butter As reqd
  • 3 cups Thick coconut milk
  • 2 1/2 cups Thin coconut milk
  • Salt As reqd


  • For preparing Coconut Milk Rice, first heat oil and butter in a big pot.
  • Add cloves, bay leaves, cinnamon and cardamom.
  • :- If you wish, you can add cashews too.
  • Add onion and saute it for 10 mins.
  • Add green chillies and saute further for 10 mins.
  • Add coriander and mint leaves.
  • Saute, till the onions become brownish.
  • Add ginger-garlic paste and saute well.
  • Add tomatoes and fry it well and make it into a thick paste.
  • :- If you need colour, add a pinch of turmeric powder.
  • Add salt.
  • When the oil starts to separate, add 5 1/2 cups of coconut milk and bring them to boil.
  • Add the drained rice into the above boiling coconut milk.
  • :- Check for salt and spices and add accordingly.
  • Lower the flame to medium.
  • Saute the rice with a long spoon.
  • When the rice and milk are in the same level, cover it with a lid.
  • Preheat the oven to 350 degree.
  • Keep the coconut milk rice in the oven for 15 mins.
  • :- Serve Coconut Milk Rice with mutton or chicken kulambu.
  • :- If u want it with vegetables, add sliced carrot and peas before adding coconut milk.
