  • Peel bottlegourd, cut into half, remove seeds, wash and then grate. Place in a strainer toremove excess water.
  • Bringthe milk to boil in a heavy bottom pan. Reduce for 20 minutes on low flame stirring
  • occasionally.
  • Squeezeout excess water from the lauki ( bottle gourd) and add to the reduced / thickened milk.
  • Cookthe lauki ( bottle gourd) in the milk for approximately 20 minutes or till cooked.
  • Addthe sugar and cook for 2-3 more minutes.
  • Addthe chopped cashew nuts and raisins and cardamom powder. (You can also addalmonds and pistachios).
  • Lauki kheercan be served hot or cold.
