This chola paniyaram tops among all, since it gives a spongy texture when cooked and served hot.

  • soak the maize / makka cholam and idly rice for four hours
  • grind it by adding soaked urad dal and make as a batter and allow to get fermented
  • finely chop the onion
  • in a pan heat the oil and temper the mustard, broken urad dal and bengal gram
  • add onion and saute it until it turn into brown
  • transfer the onion into maize batter and add finely chopped curry leaves and coriander leaves
  • mix well
  • heat the oil in the paniyaram pan
  • pour the batter and allow to cook in one side
  • once it get cooked in one side then turn it and allow to cook other side
  • now maize paniyaram is ready. serve with chutney
