2 cups Minapa Vadiyalu3 nos Brinjal3 nos Potatoes (large)1 cup Two inch drumstick pieces1 cup Coconut slices (2 inch size)1 cup Onion pieces1 cup Tomato pieces1 tsp Red chilly powder6 nos Green chillies (half split)1 tsp Mustard seeds1/2 tsp Turmeric powderGinger (garlic paste - 1 tsp)1 tsp Coriander seed powder200 ml Refined oilSalt (As reqd)1 cup Coriander leaves Cut all the vegetables to desired sizes. Soak the brinjal and potato pieces in water.Add some oil to a frying pan and heat. Add the vadiyalu and fry till they become reddish brown in color. Keep them in a plate.Heat remaining oil in the pan and fry the onion pieces until they turn brown. Add the mustard seeds, turmeric powder, coriander powder, ginger-garlic paste, half split green chillies, tomato pieces and fry till oil shows up and the tomato pieces become smooth.Now add the coconut slices, vegetable pieces, red chilly powder, sufficient salt and fry.Add the fried vadiyalu also and stir well. Add 2 cups of water and simmer in low flame until all the ingredients are well cooked.Spread finely chopped coriander leaves on the top and serve hot with rice. Andhra
