Minapa Vadiyalu With Vegetables

Minapa Vadiyalu are sun dried, some what round puffy balls made up of black gram. Available in grocery shops but home made vadiyalu are the best

  • Cut all the vegetables to desired sizes. Soak the brinjal and potato pieces in water.
  • Add some oil to a frying pan and heat. Add the vadiyalu and fry till they become reddish brown in color. Keep them in a plate.
  • Heat remaining oil in the pan and fry the onion pieces until they turn brown.
  • Add the mustard seeds, turmeric powder, coriander powder, ginger-garlic paste, half split green chillies, tomato pieces and fry till oil shows up and the tomato pieces become smooth.
  • Now add the coconut slices, vegetable pieces, red chilly powder, sufficient salt and fry.
  • Add the fried vadiyalu also and stir well. Add 2 cups of water and simmer in low flame until all the ingredients are well cooked.
  • Spread finely chopped coriander leaves on the top and serve hot with rice.
