North Indian side dish - Vaal Brinjal & Potato Bhaji

Ingredients
- Brinjal cubed : 1 nos -
- Vaal beans (Lablab Beans) : 100 gm -
- Potato cubed : 1 no -
- Coriander leaves : 3 - 4 tsp
- Green chilies : 7 - 8 nos
- Onion : 1 no -
- Garlic ginger paste : 1 tsp -
- Coriander seeds : 2 tsp -
- Cumin seeds : 1 tsp -
- Turmeric powder : ½ tsp -
- Sugar : 1 tsp -
- Oil – 2 - 3 tsp
- Salt : as reqd -

Instructions
- Grind the coriander leaves, green chilies, garlic ginger paste, coriander seeds, cumin seeds and salt to a fine paste.
- Heat oil in a pan, add onion and fry the ground masala paste with ½ tsp turmeric powder and a little water.

- Cover the pan and cook till the oil separates from the masala.

- Add ½ cup water, cover the pan and cook on a low flame for 15 - 20 minutes till the vegetables are cooked.
- Serve with roti.
