Naadan Pavakka Thoran

Naadan Pavakka Thoran is an authentic vegetarian dish in Kerala Cuisine that goes very well with hot rice. Naadan Pavakka Thoran is prepared from bittergourd, a vegetable very largely cultivated and popular in Kerala. You can reduce the bitter flavor by employing some simple home remedies like soaking for a few minutes in salted water etc. The dish is unique and special with finely grated bittergourd blended with a spicy coconut mixture. Bittergourd or Pavakka is nutritious, rich in vital nutrients required for body. Bittergourd or pavakka is well known for anti diabetic properties. It has an active insulin like compound that controls diabetics naturally. Usually kids do not favor the healthy dish due to the bitter flavor. Ingredients

Bitter Gourd : 3 nos
Coconut : 1/2 no
Onion : 1 no
Green chilli : 5 nos.
Ginger : 1/2 inch(thinly sliced)
Salt to taste
Coconut oil : few
Mustard : 1 tsp
Water : as reqd

Instructions

For preparing the healthy, nutritious dish, first soak grated bitter gourd in salted water for 5 minutes and then drain the water well.
Mix the bitter gourd, coconut, salt, green chilli, onion and salt well with hand.
Heat oil and add mustard. After the mustard splutters, add ginger.
Now add the bitter gourd mix and stir well in low flame.
Sprinkle little water, cover with a lid and let it cook.
Cook till all the water has dried up and then remove it into a serving dish.
Tasty stir fry or thoran dish is ready. Serve hot with rice for noon day meals.
