White Pumpkin Soup White pumpkin cooked with coconut milk 500 gm White pumpkin1" piece Ginger2 nos Green chillies (small)3 - Coriander leaves1 tbsp Butter5 tbsp Coconut powderSalt (As reqd)Pepper powder (As reqd) Heat butter in a pan. Add chopped white pumpkin, sliced ginger, sliced green chillies and chopped coriander leaves.Fry, till the raw smell goes.Add little water and allow the pumpkin to boil.Allow it to cool.Blend the pumpkin in a mixer grinder.Strain the soup.Boil the soup again adding required amount of water for soup.Mix 5 tbsp of coconut powder in little water and add to the boiling soup. Allow to cook.Finally, add butter, salt and pepper.:- Serve hot. Kerala
